The drink is usually served shaken with ice, on the rocks, or blended with ice (the "frozen margarita"). All three methods are frequently served with salt on the rim of the glass. Some bartenders specializing in tequila have the opinion that salt hides the flavor of bad Margaritas made with inferior tequilas.[citation needed] For people who insist on a salt rim, the bartender typically only coats half the glass or offers a straw, so that they can still taste the drink without being obscured by the salt's taste.[citation needed]

While the most common rental margaritas contain tequila, orange liqueur, lime or lemon juice, and sometimes an additional sweetener, such as simple syrup, many variations are becoming more and more common. Bottled lime juice (which contains sugar) is another method used to add sweetness.

Other than Triple Sec or Cointreau, other types of orange-flavored liqueur are sometimes used, such as Patrón Citrónge, or the Blue Curaçao, yielding the blue margarita (JC). The "grand", "royal", or "Cadillac" rental margarita often contains Grand Marnier. Often, when sweeter fruit juices or freshly muddled fruits are added to the margarita, the amount of orange-flavored liqueur is often reduced or it is eliminated entirely.

Many consider fresh squeezed lime juice the key ingredient, but fresh-squeezed lemon juice may be used and, because lemons are more consistent and sweet, is often less bitter. The most common lime in the U.S. are the thick skinned Persian limes. However, rental margaritas in Mexico are generally made with Mexican limes (Key limes). These are small, thin skinned limes and have a more tart and an often bitter flavor compared to Persian limes. Meyer lemons may be used for a sweeter taste as well.

Since some bartenders and margarita experts consider froth a good thing in rental margaritas, some people will add egg whites to a blended (but non-frozen) margarita in order to add more frothiness[citation needed].

Alternate fruit juice mixtures can also be used in arental margarita. When the word "margarita" is used by itself, it typically refers to the lime or lemon juice margarita. But when other juices are used, the fruits are typically added as adjectives in the name, with lime juice or lemon juice added like a condiment (and a wedge of lime often added to the glass). Examples of popular combinations are:

Raspberry margarita with lime juice.
Strawberry or peach margarita, with lemon juice.

Model 3311 rental margarita machine
The freezer consists of a freezing cylinder with a rotating internal auger (dasher) that is belt-driven by an electric
motor. The auger scrapes frozen product off of the inside of the refrigerated cylinder. A torque sensing mechanism
controls compressor operation to maintain desired product consistency. The freezer utilizes either an air-cooled orwater-cooled refrigeration system to freeze the product. A self-closing dispensing valve is attached to the front of thefreezing cylinder. The unit has an adjustable consistency control and an out of product indicator.
When properly operated and cared for, the Model 3311 will provide many years of rental service. Proper care includes
regular cleaning and maintenance. To minimize the amount of maintenance necessary, follow the operating
procedures outlined in this manual.Product TipsThe Model 3311 was designed to dispense a wide variety of frozen beverages including frozen fruit juice, frozenlemonade, slush and frozen cocktails. These products can be served in consistencies ranging from thin to fairly
thick.Two types of dispensing valve plungers and product consistency springs are available depending on the thickness ofthe product being served. These parts are interchangeable depending upon your retnal needs. One plunger, partW0480438 has one horizontal outlet slot and is used to serve thin to medium products such as frozen lemonade andslush. The other plunger, part W0480451 has two horizontal outlet slots and is used to serve thicker product such asneutral base frozen cocktails. A red spring, part W0631239, is used on the drive motor to adjust product consistencyto serve thin to medium products. The yellow spring, part W0631238, is used for thicker product. The spring is locatednext to the drive motor behind the right hand side panel.
Over an extended period of time, some products, such as frozen cocktails that contain alcohol, have a tendency to
separate, or stratify. Separation of product on the mix storage hopper can result in frozen product quality inconsistency.Simply keeping theproduct, in the mix storage hopper, stirred on a regular basis will eliminate this problem.Page 2 Model 3311Product Tips (cont.)Some cappuccino or latté mixes contain dairy products which can spoil if not refrigerated. If the freezer is to be turnedoff at night these products must be removed from the freezer.Contact your local health department regarding its regulations for proper mix handling and storage.
Carburetor AssemblyYour new freezer uses a metering device, known as a carburetor, to feed the proper ratio of mix and air into the freezingcylinder (and to prevent frozen product from rinsing out of the freezing cylinder).
The carburetor, or carb tube, is a tube with a hole, or series of holes, bored through the side. It is located in the hopperand fits in the hole that leads to the freezing cylinder. Air flows into the freezing cylinder through the top of thetube and mix flows in through a smaller hole in the sideof the carb tube. The size of the mix inlet hole can bebalanced with the viscosity (thickness) of the liquid mixand product draw rate, in such a way that the proper
amount of mix is fed into the freezer cylinder to blendwith air at just the right ratio. Mix viscosity varies by mixtype, mix temperature and mix age. Different serving
rates also demand different feed rates. For many rental products,the proper mix to air ratio is generally acceptedto be two parts mix to one part air. This proportionyields a finished product that is both tasty and profitable.At this ratio, one gallon of liquid mix will yield avolume of one and one-half gallons of frozen product. This
additional volume is the overrun in the product. Crathco offers three versions of carb tubes (see Figure A). Dependingon the product being served and overrun requirements there is a standard tube for most slush or cocktail products, alow overrun carb tube that allows all air trapped in the freezing cylinder to escape and a smoothie/shake carb tube.This carb tube has an outer sleeve that can be rotated to line up with different hole sizes to provide various levels ofoverrun. Most rental applications only require the standard carb tube.
Mix Considerations - GeneralFreezing characteristics are affected by the amount of sweeteners and solids in the mix. The amount of sweetenersand solids is called BRIX. BRIX can be measured with an instrument called a refractometer. A BRIX reading ofbetween 11 and 14 will provide optimum freezer operation. Mixes with this BRIX level will freeze down to a smooth,uniform cnsistency. Mixes with too high a BRIX level will take longer to freeze down and will yield a soft, wet frozenproduct. Mixes with too low a BRIX level will have larger ice crystals and will have a tendency to dispense slowly.Alcohol content also affects product freezing characteristics. High alcohol content may prevent the freezer fromserving product at proper thickness.Note: Always take BRIX measurement using mix that has been thoroughly blended, before it is frozen. Always allowfrozen mix to thaw thoroughly before taking a reading.For maximum output capacity, always pre-chill mix before adding it to the freezer. Pre-chilled mix gives the freezer ahead start on the freezing process and will speed both initial freeze down and recovery time. It is normal for otputcapacity to decrease when warm mix is added, or when the freezer is operated in a warm area.
